  • 2 large eggs

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (120g) powdered sugar (for glaze)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan, or line with parchment paper leaving an overhang on the sides for easy removal.
  2. Step 2: In a large bowl, whisk together the melted butter and granulated sugar until well combined. Beat in the eggs one at a time, then stir in the lemon zest and fresh lemon juice until smooth.
  3. Step 3: In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain, being careful not to overmix.
  4. Step 4: Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with moist crumbs, not wet batter.
  5. Step 5: While the brownies cool in the pan, prepare the glaze by whisking together the powdered sugar and 2-3 tablespoons of fresh lemon juice in a small bowl until smooth. Once the brownies are completely cooled, drizzle the lemon glaze evenly over the top.
