Savor the vibrant flavors of These Asian-inspired vegan cabbage rolls are made up of tender cabbage leaves, filled with quinoa, carrots, and mushrooms.

Ingredients

Scale
  • 1 large head of cabbage
  • 1 cup cooked quinoa
  • 1 cup shredded carrots
  • 1 cup finely chopped mushrooms
  • 1/2 cup green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger

Instructions

  1. Step 1: Begin by boiling a large pot of water. Carefully remove the core from the cabbage and blanch the whole head in the boiling water for about 2-3 minutes until the outer leaves are tender. Remove the cabbage and let it cool.
  2. Step 2: While the cabbage cools, prepare the filling by combining cooked quinoa, shredded carrots, chopped mushrooms, green onions, soy sauce, sesame oil, and grated ginger in a large mixing bowl. Mix well until all ingredients are evenly incorporated.
  3. Step 3: Once the cabbage is cool enough to handle, gently peel off the outer leaves. You will need about 8 to 10 leaves for rolling. If some leaves are too thick or stiff, you can trim them slightly to make them easier to roll.
  4. Step 4: Take one cabbage leaf and place a generous spoonful of the filling mixture at the base of the leaf. Fold in the sides and roll tightly from the bottom up to secure the filling inside. Repeat this process with the remaining leaves and filling.
  5. Step 5: Preheat your oven to 350°F (175°C). Place the rolled cabbage leaves seam-side down in a baking dish. You may add a splash of vegetable broth or water to keep them moist while baking. Cover with foil and bake for about 30 minutes until heated through.
  6. Step 6: Serve warm with your favorite dipping sauce or a sprinkle of sesame seeds on top for added flavor! Enjoy your delicious Asian-inspired vegan cabbage rolls!

Notes

  • For optimal freshness, store leftover cabbage rolls in an airtight container in the refrigerator for up to 3 days.
  • When reheating, gently warm the cabbage rolls in the oven at 350°F (175°C) for about 15-20 minutes to maintain their texture and flavor.
  • These cabbage rolls pair wonderfully with a tangy dipping sauce like soy sauce mixed with a splash of rice vinegar or a drizzle of sriracha for an extra kick.
  • To enhance the umami flavor, try sautéing the chopped mushrooms before adding them to the filling mix, as this will deepen their taste and add a deliciously rich profile to your rolls.
