Indulge in a creamy Summer Berry and Peach Cheesecake, where sweet peaches mingle with fresh berries atop a buttery graham cracker crust. Follow our simple steps for a delightful treat!

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp alcohol-free vanilla extract
  • 2 cups mixed summer berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Step 1: Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with non-stick spray.
  2. Step 2: In a mixing bowl, combine the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form an even crust.
  3. Step 3: In a separate large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla bean paste.
  4. Step 4: Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula and bake for about 45 minutes or until the center is set but still slightly jiggly.
  5. Step 5: Once baked, remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight to set. Before serving, top with fresh summer berries and sliced peaches for garnish. Enjoy!

Notes

  • For best results, store your cheesecake in the refrigerator, covered tightly with plastic wrap or in an airtight container, where it will stay fresh for up to 5 days.
  • There's no need to reheat this cheesecake; it’s best enjoyed chilled, but if you prefer a slightly softened texture, let it sit at room temperature for about 30 minutes before serving.
  • Serve your Summer Berry and Peach Cheesecake with a dollop of whipped cream or a drizzle of honey for an extra touch of sweetness that complements the fruit flavors beautifully.
  • For a lighter texture, make sure your cream cheese is fully softened before mixing, as this helps to achieve that creamy consistency without lumps.
