  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest (from 12 lemons)
  • ½ cup crushed freeze-dried strawberries

Instructions

  1. Step 1: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  2. Step 2: In a large bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until light and fluffy. Beat in the large egg and lemon zest until well combined.
  3. Step 3: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Gently fold in the crushed freeze-dried strawberries until evenly distributed throughout the dough.
  4. Step 4: Cover the cookie dough and chill in the refrigerator for at least 30 minutes. Meanwhile, preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Step 5: Scoop rounded tablespoons of the chilled dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are set.
  6. Step 6: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. For an extra touch of lemonade flavor, you may optionally drizzle a simple lemon glaze (made from powdered sugar and lemon juice) over the cooled cookies.

  • Once completely cool, keep these zesty cookies fresh in an airtight container at room temperature for up to 5 days; they might even get chewier overnight!
