5 oz (140g) fresh spinach
3 cloves garlic, minced
2 tablespoons olive oil
1/4 cup nutritional yeast
1 tablespoon fresh lemon juice

Instructions
Step 1: Cook your preferred pasta according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta.
Step 2: While the pasta cooks, heat the olive oil in a large skillet or pot over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.
Step 3: In a blender, combine the drained silken tofu, nutritional yeast, lemon juice, salt, and black pepper. Blend until completely smooth and creamy. If the sauce is too thick, add a tablespoon or two of the reserved pasta water until it reaches your desired consistency.
Step 4: Pour the blended tofu sauce into the skillet with the wilted spinach. Stir well to combine the sauce and spinach, warming gently over low heat if needed, but do not boil.
Step 5: Add the cooked and drained pasta to the skillet with the sauce. Toss everything together until the pasta is evenly coated. Serve immediately and enjoy.
