  • 1 lb medium carrots
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 lemon, zested and juiced

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Wash and prepare the vegetables. Snap off the woody ends of the asparagus spears and discard. Peel the carrots and cut them into 1/2-inch thick sticks or diagonal slices.
  2. Step 2: In a large bowl, combine the trimmed asparagus and cut carrots. Drizzle with olive oil, then sprinkle evenly with sea salt, freshly ground black pepper, and garlic powder. Toss well to ensure all vegetables are coated.
  3. Step 3: Spread the seasoned vegetables in a single layer on a large baking sheet. Ensure not to overcrowd the pan; use two sheets if necessary for even roasting and browning.
  4. Step 4: Roast in the preheated oven for 15-20 minutes, or until the vegetables are tender-crisp and slightly caramelized. Halfway through cooking (around 10 minutes), gently toss the vegetables to ensure even roasting.
