Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Toss the cauliflower florets with 1 tablespoon of olive oil, a pinch of salt, and black pepper on a baking sheet. Roast for 20-25 minutes, or until tender-crisp and lightly caramelized, stirring halfway through.
  2. Step 2: While the cauliflower roasts, prepare the marinade. In a large bowl, whisk together the 1/4 cup extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, and 1/2 teaspoon sea salt.
  3. Step 3: Once roasted, immediately add the hot cauliflower florets to the bowl with the prepared marinade. Toss gently to ensure all florets are well coated. Allow the cauliflower to cool in the marinade for about 15-20 minutes, absorbing the flavors.
