  • 1 lb ground lamb or lean ground beef
  • 1 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • 4 cups mixed greens or chopped romaine lettuce
  • 1 large cucumber, diced
  • 2 Roma tomatoes, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pitted Kalamata olives, halved

Instructions

  1. Step 1: In a medium bowl, combine the ground lamb or beef with 1 tsp dried oregano, 1/2 tsp ground cumin, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined, then form into 4 equally sized patties.
  2. Step 2: Heat 1 tbsp of extra virgin olive oil in a large skillet over medium-high heat. Add the burger patties and cook for 4-6 minutes per side, or until cooked through to your desired doneness. Remove from skillet and set aside.
  3. Step 3: While the burgers cook, prepare the bowl components. Divide the 4 cups of mixed greens or chopped romaine lettuce evenly among 4 serving bowls to form the base.
  4. Step 4: Arrange the diced cucumber, diced tomatoes, 1/4 thinly sliced red onion, Kalamata olives, and crumbled feta cheese artfully around the greens in each bowl.
  5. Step 5: Place one cooked Mediterranean burger patty on top of the greens and toppings in each bowl. Drizzle with the remaining 1 tbsp extra virgin olive oil and add a dollop of 1/2 cup plain Greek yogurt (if using) to each bowl. Serve immediately.
