  • Cooking spray or 1 tablespoon vegetable oil

Instructions

  1. Step 1: Preheat oven and prepare filling. Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with cooking spray or oil. Cook the breakfast sausage in a skillet over medium heat, breaking it up into crumbles, until fully browned. Drain any excess fat and set aside.
  2. Step 2: Prepare the pancake batter. In a medium bowl, whisk together the whole wheat pancake mix, milk, the large egg, and 2 tablespoons of maple syrup until just combined and mostly smooth (a few lumps are okay).
  3. Step 3: Assemble the bites. Pour about 1 tablespoon of pancake batter into the bottom of each mini muffin cup. Sprinkle a small amount of the cooked sausage crumbles and shredded cheddar cheese over the batter in each cup.
  4. Step 4: Top and bake. Top each filled muffin cup with another 1-2 teaspoons of pancake batter, just enough to cover the filling.
  5. Step 5: Bake until golden. Bake for 10-14 minutes, or until the bites are golden brown and a toothpick inserted into the center of a pancake portion comes out clean.
  6. Step 6: Cool and serve or store. Let the McGriddle Bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm with extra maple syrup if desired. For freezing, once completely cooled, store in an airtight freezer-safe bag or container for up to 2-3 months. Reheat in a microwave or toaster oven.
