Indulge in these refreshing Key Lime Pie – Mini No Bake Pies! A zesty filling atop a buttery graham cracker crust creates a perfect bite-sized treat. Follow our easy steps for a delightful dessert!

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed if possible)
  • 1 teaspoon lime zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Step 1: In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  2. Step 2: Press the crumb mixture firmly into the bottom and up the sides of mini pie tins or cupcake liners to form the crusts. Place them in the refrigerator to chill while you prepare the filling.
  3. Step 3: In another mixing bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest until well combined and smooth.
  4. Step 4: In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the key lime mixture until fully incorporated.
  5. Step 5: Spoon or pipe the key lime filling into each of the chilled crusts. Smooth out the tops and return them to the refrigerator for at least 2 hours to set.
  6. Step 6: Before serving, garnish with additional whipped cream and lime slices if desired. Enjoy your mini no-bake key lime pies!

Notes

  • For optimal freshness, store your mini key lime pies in an airtight container in the refrigerator for up to 3 days.
  • Since these are no-bake pies, there's no need to reheat them; simply serve them chilled straight from the fridge for the best flavor and texture.
  • For a delightful touch, consider garnishing your mini pies with fresh whipped cream and a slice of lime just before serving to enhance their presentation and taste.
  • When making the filling, ensure that your heavy cream is very cold for easier whipping, and don't skip folding gently to keep that light and airy texture in your pies!
