Instructions

  1. Step 1: In a heavy-bottomed 3-quart saucepan, combine the granulated sugar, light corn syrup, water, unsalted butter, and evaporated milk. Stir over medium heat until the sugar completely dissolves, then attach a candy thermometer to the side of the pan.
  2. Step 2: Increase the heat to medium-high and bring the mixture to a boil without stirring. Cook until the thermometer reaches 245°F (118°C), which is the firm ball stage. This process will typically take 15-20 minutes.
  3. Step 3: Carefully remove the saucepan from the heat and pour the hot candy mixture onto a buttered marble slab or a large silicone mat. Let it cool undisturbed for about 15-20 minutes, or until the edges are cool enough to handle, and the center is warm but not hot. Sprinkle the vanilla powder and salt evenly over the cooling candy.
  4. Step 4: Generously butter your hands. Begin to pull the candy, stretching and folding it repeatedly. As you pull, the candy will gradually become opaque, lighter in color, and firmer. Continue pulling for 15-25 minutes, or until it is very firm and holds its shape, indicating it's ready to be cut.
  5. Step 5: Once the candy is firm and somewhat resistant, shape it into a long, uniform rope, approximately 1-inch thick. Using buttered scissors or a sharp knife, cut the rope into 1-inch pieces. Allow the pieces to set completely at room temperature for several hours or overnight before storing.
