Instructions
Step 1: Prepare the vegetables. Wash and trim the ends off the zucchini, then slice them into thin half-moons or quarter-moons (about 1/4 inch thick). Peel and thinly slice the small yellow onion. Grate the fresh ginger and mince the garlic cloves.
Step 2: Heat the oil and aromatics. Heat a large skillet or wok over medium-high heat. Once hot, add the avocado oil and swirl to coat the pan. Add the minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant, being careful not to burn them.
