  • 2 medium zucchini (about 1.5 lbs), sliced into thin half-moons
  • 1 small yellow onion, thinly sliced
  • 1 tablespoon avocado oil
  • 2 tablespoons Tamari (or coconut aminos for soy-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 2 cloves fresh garlic, minced
  • 1 teaspoon toasted sesame seeds, for garnish

Instructions

  1. Step 1: Prepare the vegetables. Wash and trim the ends off the zucchini, then slice them into thin half-moons or quarter-moons (about 1/4 inch thick). Peel and thinly slice the small yellow onion. Grate the fresh ginger and mince the garlic cloves.
  2. Step 2: Heat the oil and aromatics. Heat a large skillet or wok over medium-high heat. Once hot, add the avocado oil and swirl to coat the pan. Add the minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant, being careful not to burn them.
  3. Step 3: Stir-fry the onion. Add the thinly sliced onion to the skillet and stir-fry for 2-3 minutes, tossing frequently, until it starts to soften and become translucent.
  4. Step 4: Add zucchini and sauce. Add the sliced zucchini to the skillet. Pour in the Tamari and rice vinegar. Stir-fry for 4-6 minutes, tossing constantly, until the zucchini is tender-crisp but still retains a slight bite.
  5. Step 5: Serve. Remove the stir-fry from the heat. Transfer the Japanese zucchini and onion stir-fry to serving bowls and sprinkle generously with toasted sesame seeds before serving hot.
