Instructions
Step 1: In a medium bowl, whisk together 1/4 cup of the BBQ sauce, soy sauce, minced garlic, and brown sugar. Add the beef cubes to the marinade, toss to coat evenly, and refrigerate for at least 30 minutes, or up to 4 hours, to allow flavors to meld.
Step 2: While the beef marinates, if using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Prepare your vegetables and fruit: cut the red bell pepper and red onion into 1-inch pieces, and ensure your pineapple chunks are also about 1-inch.
Step 3: Preheat your grill to medium-high heat (around 375-400°F or 190-200°C). Thread the marinated beef, pineapple chunks, red bell pepper, and red onion alternately onto the skewers until all ingredients are used. Discard any remaining marinade from the beef bowl.
Step 4: Place the skewers on the preheated grill. Grill for 10-15 minutes, turning every 3-4 minutes, until the beef is cooked to your desired doneness and the vegetables are tender-crisp.
