Craving fudgy goodness without guilt? These Irresistible & Healthy Date Brownies blend Medjool dates, almond butter, and cocoa into a rich, wholesome treat. Simple food processor prep.

Ingredients

Scale
  • 1.5 cups pitted Medjool dates (about 200g)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup whole wheat flour
  • 1/2 cup creamy almond butter
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal, and lightly grease if necessary. If your dates are very firm, soak them in hot water for 10-15 minutes, then drain thoroughly.
  2. Step 2: In a food processor, combine the pitted dates, almond butter, almond milk, and vanilla powder. Process until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Step 3: In a separate large bowl, whisk together the whole wheat flour, unsweetened cocoa powder, baking powder, and sea salt until well combined.
  4. Step 4: Add the wet date mixture from the food processor to the dry ingredients bowl. Mix with a spatula until just combined. Be careful not to overmix; the batter will be thick. Spread the batter evenly into the prepared baking pan.
  5. Step 5: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs, not wet batter. Avoid overbaking to keep the brownies fudgy.
  6. Step 6: Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Once cooled, cut into squares and serve.

Notes

  • Keep these delightful brownies fresh and fudgy by storing them in an airtight container in the refrigerator for up to a week, or freeze individual squares for a convenient, healthy treat anytime.
  • To revive that warm, gooey center straight from the fridge, simply pop a brownie in the microwave for 10-15 seconds; it's a game-changer for enhancing their rich texture.
  • Elevate your brownie experience by pairing a slightly warmed square with a scoop of dairy-free vanilla ice cream or a sprinkle of flaky sea salt to beautifully contrast the sweet, chocolatey flavors.
  • For the absolute fudgiest result, do not overbake; pull them from the oven when a toothpick comes out with moist crumbs, then let them cool completely in the pan to achieve that perfect dense, chewy consistency.
