Skip the oven for these dreamy No-Bake Oreo Cheesecake Bites! Velvety light cream cheese and Greek yogurt combine, then roll in crushed Oreos.

Ingredients

Scale
  • 8 oz (1 block) light cream cheese, softened
  • 1/2 cup plain Greek yogurt (2% or full-fat)
  • 1/4 cup maple syrup
  • 1 teaspoon alcohol-free vanilla extract
  • 1/4 teaspoon sea salt
  • 1520 Oreo cookies, finely crushed (about 1.5 cups crushed)

Instructions

  1. Step 1: Finely crush the Oreo cookies. Reserve about 1/4 cup of the crushed cookies in a shallow dish for coating, and set aside.
  2. Step 2: In a large mixing bowl, beat the softened light cream cheese with an electric mixer on medium speed until smooth and creamy, about 1-2 minutes.
  3. Step 3: Add the Greek yogurt, maple syrup, vanilla bean paste, and sea salt to the cream cheese mixture. Beat on low speed until just combined, then increase to medium and beat until the mixture is light and fluffy, scraping down the sides of the bowl as needed.
  4. Step 4: Gently fold in the remaining crushed Oreo cookies (about 1.25 cups) into the cheesecake mixture using a spatula until just evenly distributed. Cover the bowl and refrigerate for at least 1-2 hours, or until the mixture is firm enough to handle.
  5. Step 5: Once chilled, use a small cookie scoop or a spoon to portion out the cheesecake mixture. Roll each portion into a bite-sized ball, about 1-inch in diameter.
  6. Step 6: Roll each cheesecake bite in the reserved crushed Oreo cookies, ensuring they are fully coated. Place the finished bites on a parchment-lined plate or baking sheet and refrigerate for another 30 minutes to firm up before serving.

Notes

  • Keep these delightful bites in an airtight container in the fridge for up to 4 days, or pop them in the freezer for a longer treat – just let them sit out for 10-15 minutes before enjoying from frozen.
  • Elevate your spring celebration by arranging these vibrant bites on a pretty platter, perhaps alongside a bowl of fresh berries or a light raspberry coulis for an extra pop of color and flavor.
  • For the easiest rolling and firmest bites, resist the urge to rush the chilling steps; ensuring the cream cheese mixture is well-chilled before scooping makes all the difference for perfect, non-sticky spheres.
  • Don't be shy about personalizing your bites! While Oreos are a treat, consider swapping out some of the crushed cookies for finely chopped nuts, toasted coconut, or even a different flavored cookie for a unique twist.
