  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 4 slices of sourdough bread
  • 4 slices of Gruyère cheese
  • 2 tablespoons Dijon mustard

Instructions

  1. Step 1: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and stir to coat them in the fat.
  2. Step 2: Sprinkle the sugar over the onions and season with salt and pepper. Cook the onions, stirring occasionally, for about 20-25 minutes or until they are caramelized and golden brown.
  3. Step 3: While the onions are cooking, spread Dijon mustard on one side of each slice of sourdough bread.

Step 4: Once the onions are caramelized, assemble the sandwiches by placing a slice of Gruyère cheese on the unbuttered side of two slices of bread, followed by a generous portion of caramelized onions, another slice of cheese, and then topping with the other two slices of bread (mustard side in).
