Indulge in Fluffy Strawberry Shortcake Puppy Chow! Crisp Rice Chex coated in creamy white chocolate and infused with vibrant, powdered freeze-dried strawberries. Easy microwave prep.

Ingredients

Scale
  • 9 cups Rice Chex Cereal
  • 12 ounces white chocolate chips
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon alcohol-free vanilla extract
  • 1/4 cup freeze-dried strawberries, finely powdered
  • 3 cups powdered sugar (confectioners' sugar)

Instructions

  1. Step 1: In a large bowl, measure out the Rice Chex cereal and set aside. In a separate large (2-gallon recommended) Ziploc bag or airtight container, combine the powdered sugar and the finely powdered freeze-dried strawberries. Seal and shake well to thoroughly mix.
  2. Step 2: In a microwave-safe bowl, combine the white chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring after each, until smooth and fully melted (approximately 1.5 – 2 minutes). Stir in the vanilla powder until well combined.
  3. Step 3: Pour the melted white chocolate mixture evenly over the Rice Chex cereal in the large bowl. Gently fold and stir with a rubber spatula until the cereal is evenly coated. Be careful not to crush the cereal.
  4. Step 4: Transfer the coated cereal into the Ziploc bag or airtight container with the powdered sugar and strawberry powder mixture. Seal the bag/container tightly, making sure there is air trapped inside to allow for shaking.
  5. Step 5: Shake vigorously for 2-3 minutes, rotating the bag/container frequently, until the cereal pieces are completely coated in the "fluffy" pink powdered sugar mixture.
  6. Step 6: Spread the "Fluffy Strawberry Shortcake Puppy Chow" onto a parchment-lined baking sheet in a single layer to cool and set for at least 15-20 minutes before serving. Store in an airtight container at room temperature.

Notes

  • To keep your Fluffy Strawberry Shortcake Puppy Chow wonderfully fresh and its coating pristine, store it in an airtight container at room temperature for up to a week.
  • Since this treat is meant to be enjoyed at room temperature, reheating isn't necessary and would melt the delicate coating; simply let it sit out for a few minutes if it's been in a cooler spot and feels a bit firm.
  • Elevate your dessert game by sprinkling this fluffy treat over a scoop of vanilla ice cream or folding it into whipped cream for an extra layer of strawberry shortcake delight.
  • For that perfectly fluffy, evenly pink coating, make sure your freeze-dried strawberries are pulverized into an incredibly fine powder, almost like fairy dust, before combining them with the powdered sugar. This ensures a smooth, consistent finish!
