Ingredients
Scale
2 cups all-purpose flour
1 cup granulated sugar, divided
1 cup (2 sticks) unsalted butter, cold and cubed
1 teaspoon baking powder
1/4 teaspoon salt
4 cups fresh strawberries, hulled and sliced
2 tablespoons cornstarch
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking pan. In a large bowl, whisk together the flour, 1/2 cup of the granulated sugar, baking powder, and salt. Add the cold, cubed butter and cut it into the dry ingredients using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Step 2: Press about two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan. Bake for 10-12 minutes, or until the edges are very lightly golden.
Step 3: While the crust is baking, in a separate medium bowl, combine the hulled and sliced strawberries with the remaining 1/2 cup granulated sugar and the cornstarch. Toss gently until the strawberries are evenly coated.
Step 4: Remove the partially baked crust from the oven. Evenly spread the strawberry mixture over the hot crust. Then, crumble the remaining one-third of the crumb mixture evenly over the strawberries.
Step 5: Return the pan to the oven and bake for an additional 30-35 minutes, or until the topping is golden brown and the strawberry filling is bubbly around the edges.
Step 6: Let the shortcake bars cool completely on a wire rack before cutting them into squares. Cooling completely is essential for the bars to set properly and be easy to cut.
Notes
Store leftover bars in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days to keep them wonderfully fresh.
While these bars are delicious at room temperature, a quick zap in the microwave for 10-15 seconds per bar can gently warm the buttery crust, just be careful not to overheat the fruit.
Elevate these delightful bars by serving them with a dollop of fresh whipped cream or a scoop of vanilla bean ice cream for an extra special dessert.
For that truly "buttery crust" texture, ensure your butter is super cold and work it into the flour quickly until it resembles coarse crumbs, preventing it from melting too soon.
