  • 14 ounces smoked kielbasa sausage, cut into 1/2-inch thick rounds
  • 2 large bell peppers (any color), cored and cut into 1-inch pieces
  • 1 head broccoli, cut into bite-sized florets (about 3 cups)
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. Step 2: On the prepared baking sheet, combine the sliced kielbasa, bell peppers, and broccoli florets. Drizzle with 2 tablespoons of olive oil, sprinkle with black pepper, and toss gently to coat evenly. Spread into a single layer.
  3. Step 3: In a small bowl, whisk together the honey, soy sauce, and minced garlic until well combined. Set aside.
  4. Step 4: Roast the kielbasa and vegetables for 15 minutes.
  5. Step 5: Remove the baking sheet from the oven. Pour the honey garlic sauce over the kielbasa and vegetables, tossing to coat everything thoroughly. Return to the oven and roast for another 10-15 minutes, or until the vegetables are tender-crisp and the sauce is slightly caramelized. Serve hot.
