Ingredients

Scale
  • 1 large head cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Panko breadcrumbs

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Step 2: Prepare the cauliflower. Wash the head of cauliflower thoroughly. Carefully remove the outer leaves and trim the bottom of the core, ensuring it stays intact. Place the cauliflower cut-side down and slice it vertically into 3/4 to 1-inch thick "steaks". Any florets that break off can be roasted alongside.
  3. Step 3: In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, salt, and black pepper until well combined. Arrange the cauliflower steaks in a single layer on the prepared baking sheet.
  4. Step 4: Brush both sides of each cauliflower steak generously with the seasoned olive oil mixture. Evenly sprinkle the Panko breadcrumbs over both sides of the steaks, pressing gently to adhere.
  5. Step 5: Bake for 20-25 minutes, then carefully flip the steaks. Continue baking for another 15-20 minutes, or until the cauliflower is fork-tender, golden brown, and crispy on the edges. Serve immediately.

Notes

  • Store any cooled leftover cauliflower steaks in an airtight container in the refrigerator for up to 3 days, though they are truly best enjoyed fresh.
  • To bring back their glorious crispness, reheat leftover steaks in a toaster oven or air fryer at 350°F (175°C) for about 5-10 minutes until thoroughly warmed and re-crisped.
  • Elevate your serving by adding a bright finish; a squeeze of fresh lemon juice, a sprinkle of fresh herbs like parsley or cilantro, or a drizzle of your favorite creamy sauce would be delightful.
  • For maximum crispiness and flavor, ensure you don't skimp on pressing the Panko breadcrumbs firmly onto both sides of the seasoned steaks, and don't be afraid to let them get deeply golden in the oven.
