  • 2 cloves garlic, minced
  • 5 oz (about 150g) fresh spinach, roughly chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 4 large eggs
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. Step 1: In a large non-stick skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  2. Step 2: Add the chopped fresh spinach to the skillet. Cook, stirring occasionally, for 3-5 minutes until the spinach has wilted completely and most of its liquid has evaporated. Season with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
  3. Step 3: Pour in the heavy cream and stir in the grated Parmesan cheese. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 2-3 minutes. Taste and adjust seasoning if needed.
  4. Step 4: Using the back of a spoon, create four small wells in the spinach mixture. Carefully crack one egg into each well. Cover the skillet with a lid and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
  5. Step 5: Season the cooked eggs with the remaining salt and pepper. Serve immediately, perhaps with a side of crusty bread.

  • While best enjoyed fresh, any delicious leftovers can be stored in an airtight container in the fridge for up to 2 days; just know the egg yolks might not be as perfectly runny upon reheating.
