Ingredients
Scale
1 cup unsweetened coconut milk (from carton or light canned)
1 large frozen banana, sliced
1/4 cup fresh key lime juice
1 teaspoon key lime zest
1–2 tablespoons maple syrup (or agave, to taste)
1/2 cup ice cubes
1/4 cup unsweetened shredded coconut
1/2 teaspoon vanilla bean paste
Instructions
Step 1: Prepare your ingredients. Ensure the banana is frozen and sliced for best smoothie consistency. Zest the key limes before juicing them to easily obtain the required zest.
Step 2: Combine all liquid ingredients, sweetener, zest, and vanilla bean paste in a high-speed blender. Add the unsweetened coconut milk, fresh key lime juice, maple syrup, key lime zest, and vanilla bean paste.
Step 3: Add the solids and ice to the blender. Add the sliced frozen banana, ice cubes, and shredded coconut to the blender with the liquid ingredients.
Step 4: Blend until smooth and creamy. Secure the lid and blend on high speed until the mixture is completely smooth, thick, and well combined, stopping to scrape down the sides with a spatula if necessary.
Step 5: Taste, adjust, and serve immediately. Taste the smoothie and add more maple syrup if you prefer it sweeter, or a splash more coconut milk if it's too thick. Pour into glasses and serve immediately, optionally garnished with a slice of key lime or a sprinkle of extra shredded coconut.
Notes
Sip any leftovers within 24 hours! Store your smoothie in an airtight container in the fridge, giving it a good shake or stir before enjoying as it might separate slightly.
This vibrant smoothie is truly a treat best enjoyed chilled; reheating is not recommended as it will drastically alter its delightful texture and fresh flavor.
For that ultimate "pie" feel, serve immediately in a chilled glass, perhaps with a dollop of coconut whipped cream on top, or crumble a few graham cracker crumbs over it for a delightful textural contrast.
For an extra thick and truly satisfying "pie" texture, ensure your banana is completely frozen solid before blending. This helps create a wonderfully creamy consistency, reducing the need for too much ice which can dilute the flavor.
